No Bake Oatmeal Cookie Balls
I love sweets, but I'm no baker. When I saw the recipe on Taste and Tell for No Bake Oatmeal Cookie Balls, it was a no brainer. Oats, chocolate, peanut butter, and no oven involved?! Yes please!
No Bake Oatmeal Cookie Balls
2 cups rolled oats
3/4 cup white sugar
3 tbsp unsweetened cocoa powder
1 tbsp water
1/2 tsp vanilla
1/2 cup butter, softened
2 tbsp peanut butter
1 cup confectioners' sugar
In a large bowl, combine oats, sugar, and cocoa. With clean hands, mix in the water, vanilla, butter, and peanut butter to form a dough.
Wash hands, then roll the dough into balls 1 to 2 inches in diameter. Roll balls in confectioners' sugar until thickly coated.
Chill 20 minutes before serving.

Hi Toni -- I've never tried them without the chocolate, but I'd be interested to hear how they tasted if you decide to try it. I bought cocoa powder for this recipe specifically and since then it's popped up in a few other dessert recipes and it's actually getting pretty good use from my pantry. (Not to mention these cookies specifically are awesome when you have a sweet tooth that needs satisfying in 15 minutes flat).
ReplyDeleteI tried these tonight without the cocoa powder and with only a half cup of sugar. They definitely satisfied the sweet tooth for sure. I also cut back on the butter a bit so they weren't as easy to manipulate into balls, but I don't think I'll need sugar again for two weeks.
